Yas
Yas took over PLANB with a clear vision , to put hospitality at the heart of everything.
Growing up in Marseille, a cosmopolitan port city where cultures have blended and lived side by side for generations, he was shaped by a city that has always welcomed everyone. From this openness, he brings a spirit of generosity and warmth to PLANB, making every guest feel at ease and at home.
Passionate about food and wine, Yas draws inspiration from his Mediterranean roots and his father, who was a Chef-Patron. Fresh, high-quality ingredients and a focus on generosity and sharing guide every plate.
For Yas, hospitality has always been about more than food, it’s about how people feel, the atmosphere, and the joy of gathering around a table. At PLANB, he creates a space where guests can slow down, connect, and feel part of something shared.
Borys
Borys, Head Chef at PLANB, joined drawn to Yas’ vision, a place built on hospitality and good food, where people feel welcome and at ease. That sense of warmth and simplicity first connected him to the project.
His cooking journey began at home with his mother and grandmother, learning simple, everyday cooking and a natural respect for ingredients.
He trained in Kyiv and worked through professional kitchens, where discipline and French technique shaped his path.
His cooking today is inspired by the Mediterranean, from Spain, Italy, Southern France, and North Africa, where simple ingredients bring strong flavour.
At PLANB, he works with the team to create honest, balanced dishes focused on quality and simplicity.
For Borys, cooking is about respect for ingredients and serving food that feels thoughtful and generous.
Zac
Zac is part of the PLANB family, one of the first smiles you meet when you walk through the door.Before the coffee, before the plate, before anything is served, he brings the welcome. The kind that feels simple, genuine, and easy.
Growing up around Finsbury Park and Crouch Hill gave Zac a real connection to the area, but what he brings to PLANB goes beyond being local. He brings the rhythm of someone who understands people, who knows how to make a room feel lighter, and who makes guests feel welcome from the first moment
Passionate about coffee, Zac takes pride in his work as a barista. Every cup is made with care, consistency, and attention, because for him coffee is often the first moment between PLANB and a guest.
But Zac’s place at PLANB is not only behind the coffee machine. It is in the smile, the joke, the greeting, the way he remembers people, and the way he makes a visit feel personal.
For Zac, hospitality is not performance. It is being present.
At PLANB, he represents the heart of the house: generous, relaxed, full of life, and always ready to welcome you in.
